Mirin syrup is a sugar-free seasoning made by reducing hon mirin. As it cooks down, it becomes thick, mellow, and naturally sweet.
Prepare the basic syrup once, then use it in drinks, desserts, jellies, puddings, toast, and savory dishes.
Ingredients
- 200 ml hon mirin
Use hon mirin, not mirin-style seasoning.
Method
- Pour the hon mirin into a saucepan and bring it to a boil over high heat so the alcohol evaporates.
- Continue heating, watching carefully to prevent it from boiling over. Reduce until the volume is approximately 100 ml and the liquid begins to thicken.
- When the syrup is light amber and coats a spoon, remove it from the heat.
- Allow it to cool, transfer it to a clean airtight container, and refrigerate.
Storage
Keep refrigerated and use within approximately one week. If the syrup turns white or becomes firm, warm it gently to return it to a liquid state.
Ways to Use Mirin Syrup
- Use it in place of honey, sugar, or maple syrup in drinks, cooking, and desserts.
- Add it to iced coffee or iced tea.
- Drizzle it over toast for a clean, mellow sweetness.
- Use it as a base for jelly or pudding.
Food safety: Ensure the mirin is thoroughly boiled so the alcohol evaporates. If serving to children, follow appropriate dietary guidance.
